Ingredients

  • 2 tbs olive oil
  • 1/2 brown onion – sliced
  • 2 garlic cloves
  • 3-4 large tomatoes – cored & roughly chopped
  • 1/2 red capsicum- chopped
  • 1/4 cup coriander stalks
  • 1 red chilli – deseeded and chopped
  • 1 tsp cumin
  • 1/2 tsp sumac
  • 2 eggs
  • 1/4 cup fresh coriander leaves

Method

  1. Pre heat oven to 160 C
  2. In a small oven proof fry pan heat the olive oil on a medium heat
  3. Add the onion, coriander stalks, garlic and cook for 3-4 mins
  4. Add the spices and cook for further 1 min – stirring
  5. Add the tomatoes and capsicum cook for 6-7 minutes
  6. Make 2 depressions in the tomato and crack the eggs in
  7. Place in the oven and baked for roughly 6-8 minutes or until eggs are cooked to your liking
  8. Remove from the heat, season and top with fresh coriander
