  • 500g lamb mince
  • 2 tbs olive oil
  • 1 brown onion – sliced
  • 3 garlic cloves – chopped
  • 1 celery – trimmed and diced
  • 2 carrots – trimmed and diced
  • 4 large field mushrooms – quartered
  • 500mls beef broth
  • 800g fresh chopped toms or tin toms
  • 1 sprig thyme
  • 2 tsp oregano
  • 2 bay leaves
  • 100mls passata
  • Sea salt
  • Black pepper


  1. In a oven proof pot heat the oil on a medium heat. Add the onion, garlic, carrots, celery and sauté for 4-5 minutes
  2. Add the herbs and stir for 1 minute
  3. Turn the heat up and throw in the mince, keep stirring until all the mince is browned
  4. Add the bone broth and allow to reduce by half
  5. Throw in the toms and passata and stir
  6. Bring to the boil, then reduce to a simmer and cook for 25 minutes or until the Bolognese is close to your desire consistency
  7. Add the mushrooms and cook for a further 10-15 minutes
  8. Remove from the heat and season
