Salmon in a Bag Food, Healthy Eating

Ingredients

  • 1 salmon fillet
  • 1/2 lemon – sliced
  • 2 tbs olive oil
  • 1 tsp capers
  • 6-8 kalamata olives – chopped
  • 6-8 cherry toms – halved
  • Pinch Sea salt
  • Pinch Black pepper

Method

  1. Pre heat the oven to 180 degree
  2. In a mixing bowl combine the fennel, cherry tomatoes and olives , drizzle a little olive oil
  3. Place the sliced lemon in the middle of the baking paper
  4. Place the fish on top of the lemon
  5. Place the dill on top of the fish and pour the fennel mixture on and around the salmon
  6. Drizzle some olive oil
  7. Season
  8. Create a parcel by grabbing the four corners and bringing together before tying together
  9. Place in the oven for 8-10 minutes depending on the size of the fillet
  10. Remove from the oven and allow to rest before cutting the bag with scissors
