Waldorf Salad with Ranch Dressing Food, Healthy Eating, Healthy Eating

  • 2 chicken breasts – cooked, cooled and shredded (poached for 12-15 mins)
  • 2 celery sticks – chopped
  • 1 avocado – sliced
  • ½ cup walnuts – lightly chopped
  • 1 lebanese cucumber
  • ¼ bunch dill – roughly chopped
  • Handful pepitas
  • Handful of endive
  • ½ Granny smith apple – sliced
  • 3 tbs ranch dressing (see below)
  • 1 ripe avocado
  • 3 tbs olive oil
  • 2 tbs coconut cream
  • 1 tbs apple cider vinegar
  • ¼ bunch parsley
  • 1 tsp Dijon mustard
  • Sea salt
  • Black pepper


  1. Throw all the ingredients into a large mixing bowl
  2. Add 3-4 tbs of ranch dressing (see below)
  3. Lightly toss
  4. Season


  1. In a blender combine all the ingredients for the ranch dressing and blitz for 20 secs or until fully combined
